The salty-spicy base of fermented beans, the warmth of the peppers, and the layers of spices created a complex yet harmonious symphony. It wasn’t just a shock—it was a revelation. I began to understand what made it special.

Now, douchi hotpot is one of my favorite kinds of hotpot. This experience taught me an important lesson: some things, like some people, need time and a second chance to reveal their true essence. Overcoming that first impression gifted me with one of my most vivid culinary passions. Now, whenever I visit Guizhou, that spicy aroma feels not like a challenge, but like a familiar and welcoming greeting.
