還記得剛來(lái)貴州的時(shí)候,我第一次見(jiàn)識(shí)了當(dāng)?shù)氐奶厣刽疱?。?dāng)時(shí),餐館里彌漫著濃郁的發(fā)酵氣味,讓我忍不住皺起鼻子。我覺(jué)得它太臭了,甚至有點(diǎn)刺鼻,于是堅(jiān)信這道菜不適合我。我寧愿選擇更熟悉的火鍋,避開(kāi)這個(gè)“有味道”的鍋?zhàn)印?/p>

I remember when I first arrived in Guizhou, I encountered the local specialty—douchi hotpot. At the time, the rich, fermented aroma lingering in the air of the restaurants made me turn up my nose. It seemed too pungent, even off-putting to me, and I was convinced this dish wasn’t for me. I preferred to avoid this "fragrant" pot, opting for more familiar choices instead.

But fate had other plans, and one day I took the risk and tried it. And a miracle happened: behind the powerful smell lay an incredibly rich, deep, and savory flavor. The salty-spicy base of fermented beans, the warmth of the peppers, and the layers of spices created a complex yet harmonious symphony. It wasn’t just a shock—it was a revelation. I began to understand what made it special.

 

每一次相遇,這口熱鍋都向我展現(xiàn)新的面貌。它對(duì)我來(lái)說(shuō)不再僅僅是食物,更成了熱情好客和溫暖聚會(huì)的象征。最初的反感早已消失得無(wú)影無(wú)蹤,取而代之的是與日俱增的欣賞。我自己也開(kāi)始想念那種特別的滋味了。

With each new encounter, this hotpot revealed itself to me in new ways. It stopped being just food to me and became a symbol of hospitality and warm gatherings. Not a trace of my initial rejection remained—it was replaced by growing admiration. I even began to miss that distinctive taste myself.

Now, douchi hotpot is one of my favorite kinds of hotpot. This experience taught me an important lesson: some things, like some people, need time and a second chance to reveal their true essence. Overcoming that first impression gifted me with one of my most vivid culinary passions. Now, whenever I visit Guizhou, that spicy aroma feels not like a challenge, but like a familiar and welcoming greeting.
